Texas stuffed baked potatoes, there nothing else like it!

This stuffed baked potatoes recipe will make you forget about plain ol'baked potatoes or even mashed potatoes. The combination of ingredients in this recipe brings out the best of any potato. Try this side dish once and believe me, you'll be adding it to your list of favorites!


  • 4 large bakers (taters)
  • Pepper (to taste)
  • 2 green onions, sliced – use top
  • Parsley, chopped
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1 home grown Texas tomato,
  • peeled and diced


Bake these taters for about 1 hour at 400 degrees or until done (do fork test). Cut taters in half, lengthwise. Scoop out the taters and place in a large bowl. Beat the taters and add sour cream, onions, salt, pepper and parsley. After mixed well, add the diced Texas home grown tomatoes. Then load the taters (mix) back into the tater shells. Place back in oven at 325 degrees to keep warm prior to serving hot. I suggest topping with a grated sharp cheddar cheese prior to serving, but use your favorite cheese.
