I personally use this Sauteed Veggies mix for all my fajita recipes, which include beef, chicken, venison or fish.
- 1 Teaspoon Olive Oil
- 1 Large Yellow Onion
- 2 Large Bell Peppers
- 1 Jalapeno Pepper
- 1 Serrano Pepper
Begin by preparing your veggies.
First prepare your bell pepper by de-seeding and de-ribbing the peppers. Slice the pepper lengthwise into ¼ to ½ inch strips.
Next, cut your onion in half going with the grain of the onion and cut into ¼ to ½ inch strips.
After the onion comes my favorite part! Clean, de-seed and cut the peppers in thin strips, approximately 1/8 inch. (Suggestion: Wear gloves and don’ t get your hands anywhere near your eyes!)
Next, I prefer to take a cast iron skillet and pour about 1 teaspoon of olive oil into the pan and bring to a medium heat, then add veggies. This will require some attention, but you will want to stir the mix frequently for approximately 5 minutes. I always use the onions as my gauge to readiness. Once the onions become slightly translucent………then all veggies are ready!!
