Kick-it up a notch in your healthy eatin', try this red potato recipe with mixed veggies!

Cook's Notes: You know, sometimes I get tired of the same ol' vegetable trap. This red potato recipe is a perfect alternative to the traditional sides. Same ingredients, just a different flavor, and also, a little healthier (Maybe not much, but some!)

Ingredients:

  • 6 Red New Potatoes
  • 1 small bag Peeled Baby Carrots
  • 1 medium sized sweet onion
  • 1/4 cup olive oil
  • 1 package of dry onion soup mix
  • Temperature 375 degrees

Directions: Wash and scrub potatoes then quarter.  Cut onion into chunks, or thick slices and quarter. You want your pieces rather large.  Place mixture of veggies, soup mix and olive oil in large bowl and stir to coat.  Place mix on large cookie sheet with sides or large pyrex baking dish.  Bake for 30-40 minutes (stir mixture occasionally).

Side Note: Great to add a combination of vegetables to the mix.  After 20 minutes remove potato and onion mixture from oven and try throwing in some sliced squash (yellow or zucchini, mushrooms, whatever, and stir to coat the additional vegetables.  Place back in oven and continuing roasting for another 20 minutes or until potatoes are fork tender.

This dish goes well with any grilled meat, especially pork.
