Recipe for Pico de gallo

This appetizer is more of a sauce that is served with chips, or is served as a complement to many grilled entrees. In either case, the key to great pico de gallo is fresh ingredients.

Ingredients:

  • 2-3 ripe diced tomatoes
  • 3-4 chopped green onions tops included
  • 1/2 bunch chopped fresh cilantro leaves
  • 1/2 Squeezed Lime Juice (or to taste)
  • 1 Chopped Jalapeno (Add another half if you like it hot)

Directions:

Keep it simple... Mix the above listed ingredients, blend or mix and then taste. Place over stove until melted to proper smooth texture or place in a microwave. If you choose the microwave path, play close attention and periodically stir to keep cheese from boiling over. You’ll be totally impressed with yourself...
