Think grilling fish is tricky? Not if you know the secret!
For grilling fish it is a much easier proposition if you purchase and use “a fish griller”. This is merely a hinged wire grill basket, which will keep your fish together and not allow for it sticking or falling through the grill. You can purchase these basket’s that are especially made for fish and many other delicate items such as vegetables and kabobs. Another method is to not filet the out side of the fish and cook the fish scale side down until the tail turns upward and the meat is flaky. See attached recipe “Justin’s Redfish on the Half Shell.
