Beef Grilled Shishkabob
This is an old family recipe that was one of RD Koetting favorites; one that his family would always request! Course they didn’t always get it, but when they did, “They were happy!”
- ¼ Cup Apple Cider Vinegar
- 2 Tsp Worcestershire Sauce
- 1/2 Cup Salad Oil
- 1/4 Cup chopped onion
- 1 Tsp of Salt and Pepper
To make the marinade, combine the oil, vinegar, Worcestershire sauce, salt, pepper and chopped onion in a large gallon size zip lock bag. Mix thoroughly.
- Top Sirloin, Cubed
- 1 Zucchini Squash
- 1 Yellow Squash
- 1 8 Ounce Package Of Whole Mushrooms
- 1 Pint Of Cherry Tomatoes
- 1 Whole Sweet Onion
- 1 Small Yellow Pepper
- 1 Small Green Pepper
- 1 Small Red or Orange Pepper
Start by cutting your top sirloin into large cubes. Slice the zucchini, yellow squash and the peppers into thick slices, Cut the onion into thick wedges, and rinse the mushrooms.
Place all the vegetables into a zip lock bag with ½ of the marinade. You can place the cherry tomatoes in the bag, but since they don’t absorb much of the marinade I just leave those out until ready to assemble the skewers. Refrigerate vegetables until ready to use.
Pour the rest of the marinade over the cubes of beef. Coat thoroughly and place in the refrigerator overnight or at least for several hours to give the flavors time to penetrate the meat, stir occasionally.
Assemble the skewers by alternating the meat cubes and the vegetables. You will need approximately 6 skewers for this amount of meat and vegetables.
Place on the grill and rotate the skewers after about 3 minutes. Keep turning every couple of minutes until browned on all sides or until you reach the desired degree of doneness for the beef. (Cooking time approximately 10-12 minutes)
