Cooking on Coals, the slow and authentic BBQ

Normally this technique is performed on the weekend or when the chef has much more time as it can take up to an hour to load and arrange the charcoal, start the fire and get the coals to the proper cooking temperature. The “Purist” however will find the time for this process as they hold that there is an incredible taste difference between charcoaling and gas grilling. You be the judge!
