Texas chile con queso recipe:

There is Chile Con Queso and then there is Texas Style Chile Con Queso. Once you try this you’ll never look back!


  • 1 lb Velveeta Cheese
  • 1 Can Diced Tomatoes (Rotel)
  • 1/2 lb Sausage (I prefer hot)
  • 1 Dollop of Fresh Guacamole (for all you guys that don’t understand dollop, that’s a heaping spoonful!)


So naturally you melt the cheese. Then add the diced tomatoes, continuing to mix on low heat. Brown your sausage in a separate skillet. Upon completion, place the cheese in a large bowl, add the sausage and mix, then naturally you add a large dollop of guacamole on top. Wait till you start to eat before mixing in the guacamole. Then stand back. It’ll be gone in a minute. The good thing about this is don’t be afraid to reheat in the microwave if necessary
