- 4 Egg Yolks, Beaten
- 1/2 Cup Sweet Cream Butter, Melted
- 1 Tablespoon plus 1 Teaspoon Lemon Juice
- 1 Tablespoon plus 1 Teaspoon Tarragon Vinegar
- 1/4 Teaspoon Dried Whole Tarragon, Crushed
- Pinch Of White Pepper
- Pinch Of Dry Mustard
- 1 Tablespoon Water
As we say in Texas, “It don’t get no easier than this!” Start by combining all ingredients except the butter, in a container or blender; blend on high speed for about 3 seconds.
Next turn your blender down to a low speed; add your melted butter to the mix in a very slow steady stream. Then turn your blender up to a high speed and mix until thick.
This sauce is best served with beef, pork, poultry or vegetables.
