Fred's Red Barbecue Sauce

Cook's note: For this barbecue sauce, the amount of crushed red pepper in the recipe gives the sauce a slight zing.  Omit the pepper for a milder taste, or increase the amount if, like Fred, you prefer a tongue-lashing.  You can store this in an empty ketchup bottle for easy dispensing.

  • 1 1/2 cups ketchup
  • 1 can (8 oz) tomato sauce
  • 1/2 cup water
  • 1/2 cup brown sugar
  • 1/3 cup Worcestershire
  • 2 TBLSP soy sauce
  • juice of 1 lemon
  • 1 tsp. ginger
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. oregano
  • 1/2 tsp. basil leaves
  • 1/2 tsp crushed red pepper, see cook's note
  • 1/4 tsp. allspice

Directions: Place all ingredients in a small saucepan and stir to mix well.  Bring to a boil over high heat, about 3 minutes.  Reduce the heat to low and simmer for 10 more minutes, stirring occasionally to blend flavors. Remove from the heat and measure out the portion you need for grilling.  The remaining sauce will keep, refrigerated, in an airtight container for up to 1 month.

Makes one quart.
