Frederickburg Apple Cake With Cream Cheese

Fredericksburg Apple Cake With Cream Cheese Frosting


  • 2 Large Farm Fresh Eggs
  • 2 Cups Sugar
  • 1 Cup Salad Oil
  • 1 Teaspoon Vanilla
  • 2 Cups Sifted Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Cinnamon
  • ½ Teaspoon Salt
  • 1 Cup Pecans, Chopped
  • 4 Cups Thinly Sliced Granny Smith Apples (Approximately 5 Medium SizedApples)

Directions For Cake:

Beat the eggs until they are foamy. Add sugar and oil and beat for 5 minutes. Mix in the vanilla, baking soda, flour, cinnamon and salt. (Batter will be thick.)

Next add the apples and nuts. Then pour the batter into a well-greased 13 x 9 inch baking dish.

Bake at 350 degrees for 50 – 60 minutes. After removing from the oven, let stand for 10 minutes. Remove from the pan and cool. Frost with Cream Cheese Icing.

Cream Cheese Icing:


  • 2 (3 Ounce) Packages Cream Cheese, Softened
  • 3 Tablespoons Sweet Cream Butter, Melted
  • 2 Cups Confectioners’ Sugar
  • 1 Teaspoon Vanilla

Directions For Icing:

Mix all ingredients very well until smooth. Refrigerate until ready to use.
